During my three day food intake I discovered that I only consumed 88 grams of protein. In these three meals I spent almost 40 dollars and I was short almost 100 grams of protein required for my weight. Four slices of pizza, and two double cheeseburgers produced the most protein. Oatmeal, beer, and coffee only counted for less than 10 grams. All six items consumed over the 3 day stretch accounted for carbohydrates. The items ranged from 10g to 100g of carbs. The only item with enough lipids was the McDonald’s oatmeal. The rest of the meals were relatively low. I need to make better planning to include more lipids into my health plan.

In the past few weeks, I have attempted to exercise at least 5 times a week, challenge myself by eating more fruits and veggies, drinking more water, eating more superfoods, and getting at least 8 hours of sleep at night. It is necessary to maintain a healthy nutrition in order to maintain a good health in life. It is a key factor to know what kind of nutrients you need for a good developing in life. I realized that I eat an extensive amount of meat and that affected the category of saturated fat in the report. Reflection On Food Intake

I recorded my food intake for two seperate days during the week. I kept track of my food intake for Wednesday the 21st of March along with that Saturday, the 24th of March. There were a couple differences when comparing the two days after recording them and looking at my Meal Summary. I ate a variety of foods both days when looking through my Meal Summary. I ate plenty of protein and grains during those two days along with fruits. When looking at both Wednesday and Saturday I noticed that I ate more on a weekday rather than on a weekend day. I came to the conclusion that it is because I am much more busy during the week verse the weekend.

At a young age, I had always had an aggressive appetite, never caring about what I put into my body because I was young, and it was of no concern to me. Throughout the class I have learned many things about nutrition that I did not know about my own health. The assignments on the diet analysis, obesity, and healthy eating plan helped me learn the most about my nutrition and what I can do to improve it. The assignment that I enjoyed the most was the three-day diet analysis for both week one and week six. These assignments helped me see what I was consuming too much of and what I was not consuming enough of. I found out that I was consuming too much of the mineral sodium, which in my family leads to high blood pressure. I also found out that I am not consuming near enough fruits and vegetables. Both weeks I was hardly eating any fruit at all. Since I have been consuming more fruits and vegetables I find that I am less hungry throughout the day. The discussion question topic that interested me the most was the second discussion question in week six about obesity. We had to visit the American Obesity Awareness website and answer the question of what we learned about obesity from that site that we did not know before. I was completely unaware that obesity can cause cancer. I was amazed at that fact. I was also amazed of the fact that 200 million Americans are either considered obese or overweight, that is a lot of people. The assignment that affected me the most in terms of overall health and nutrition was the healthy eating plan assignment from week one. This assignment helped me see what foods I was missing from my diet and what I needed to take out of my diet. I started consuming more fruits and vegetables and less grains. The environment and culture that we are exposed to plays a significant role in shaping our eating.1 This influence has impacted me since I love American soul food which is often cooked in my family. I grew up in a culture where soul food was a staple, and hence I inadvertently picked up the habits around. There are also those foods that I grew up eating since I was young. I often indulge in consuming comfort foods, especially when I want a quick fix to satisfy my cravings for something sweet. Comfort foods are things that people usually eat to feel better.2 The comfort foods recipes are primarily influenced by what I ate growing up at home, which shows that cultural influences live with us for a long time. I often eat things like apple pie, pancakes, mashed potatoes, macaroni and cheese, grits, chocolate chip cookies, and ice cream among others. Most of these indulgent snacks and meals are full of sugar and unsaturated fats which are vital contributors to cases of obesity.2 However, I am not overweight despite my indulgence in all these sweet nostalgic recipes.

I am conscious of the advantages of proper nutrition, and hence I strive to eat what is best for my body. I love eating salads since they have numerous health benefits to the body such as folic acid, fiber, and vitamin C.1 I believe that healthy eating is the best way to stay clear of lifestyle diseases like high blood pressure in the future. Salads consist primarily of fruits and vegetables which are nutrient-dense foods.1 My salad eating habit has developed due to my mother's influence and also because of the conscious need to maintain a healthy lifestyle. My eating habits also include some unhealthy indulgences like sweets. I eat too many sweets, and I know it cannot be good for my health due to the high sugar content. However, I can help myself since I formed the habit since I was a young child.

My current eating habits are a reflection of how I grew up and my current surroundings. My parents have naturally had a significant influence on my food choices since I have grown accustomed to dishes that were prepared at home. Growing around soul food enthusiasts created the urge that I always have for this particular meal. I also tend to eat comfort foods when I feel nostalgic since they give me a feeling of the good old days at home. I enjoy salads because the media today is always portraying the dangers of the unhealthy foods we eat.1 Many nutritionists recommend vegetables for their nutritional value.

I see many connections between my food preferences and my past influences. I love eating Caribbean food due to my Caribbean heritage. The meals that were always cooked as I grew up in this culture are still some of my favorites to date. My love for salads is also due to my mother's insistence since I was little. She always insisted that we eat a salad every day for healthy bodies.

My past will have a significant influence on the people I work with because I have had diverse experiences. The fact that I enjoy what I eat based on my past preferences, environment, culture, and experience means that I understand the importance of these factors in determining the food choices people make. This knowledge will shape my public perception since everyone has different backgrounds and hence different tastes as well.

Reflections on Nutrition Overall I have enjoyed every aspect of this class. However, I must say that I enjoyed the healthy eating plan assignment. This assignment gave me an overview of my eating habits as a whole. Having to put everything on paper enabled me to acknowledge a change was needed and where the change was needed. Prior to composing a healthy eating plan, I was never equipped with the knowledge to know there were nutrients missing from my daily diet. This particular assignment showed me that I wasn’t absorbing enough fiber daily and that I needed to consume more whole grains, fruits and green vegetables.

I’ve also learned that a combination of good nutrition and regular exercise together will assist me in maintaining good health. I also understand the importance of eating a well balanced meal to ensure the recommended amount of daily nutrients is being met. I can’t pinpoint any one particular assignment that has affected my life in terms of overall health and nutrition habits because they all have affected my overall health in a positive way. I now make a conscious effort to watch my fat and calorie intake.

The readings have helped to better understand how the body digests foods and the impact a poor diet can have on the body. This class has also enlightened me on impact of what I eat today and how it will affect my body tomorrow. Since starting this class I have lost 35lbs and have seen a significant decrease in my sugar levels and have more energy than ever. To ensure I live a healthier life and rid myself of having to take medication for my type-2 diabetes and hyper tension, it is mandatory I continue the path of eating healthy and exercising on a regular
