Many people live and die by food. While its primary purpose is to provide us with the necessary nutrients to carry out bodily functions, the satisfaction food can give a person is beyond compare. For people of many occupations, such as chefs, waiters, bakers, and food critics, food has become a way of life.

Why do so many people enjoy food? It can provide us with the sensory pleasure we need to escape from the trials of daily life. From the moist tenderness of a good-quality steak to the sweet, rich decadence of a hot fudge sundae, food is truly magical. Instead of eating to stay alive, many even joke that they “live to eat.” In good food, every bite is like heaven.

In this essay, Tapia writes about deep-fried foods and their effects on people’s health. She says they are high in trans fat, which is detrimental to one’s health. On the other hand, she notes reasons why people still eat foods such as potato chips and french fries, including exercise and simply “making the most of life.” Despite this, Tapia asserts her position that these foods should not be eaten in excess and can lead to a variety of health issues. She encourages people to live healthy lives by enjoying food but not overeating. 

“Because while a goal of many vegetables a day is admirable, in the beginning it’s much more sustainable to start with something as little as two. I learned that with an approach of two-vegetable dishes at a time, I would be a lot more consistent, and over time a large variety would become very natural. In fact, now following that framework and cooking a few simple dishes a day, I often find that it’s almost difficult to not reach at least several kinds of vegetables a day.”

Okumura discusses simple, healthy cooking in the Japanese tradition. While many tend to include as many vegetables as possible in their dishes for “health,” Okumura writes that just a few vegetables are necessary to make healthy but delicious dishes. With the help of Japanese pantry staples like miso and soy sauce, she makes a variety of traditional Japanese side dishes. She shows the wonders of food, even when executed in its simplest form. 

“I make pesto out of kale stems, toast the squash seeds for salad and repurpose my leftovers into brand new dishes. I love cooking because it’s an exercise in play. Cooking is forgiving in improvisation, and it can often surprise you. For example, did you know that adding ginger juice to your fried rice adds a surprisingly refreshing flavor that whets your appetite? Neither did I, until my housemate showed me their experiment.”

In her essay, Luo writes about her love for food and cooking, specifically how she can combine different ingredients from different cuisines to make delicious dishes. She recalls experiences with her native Chinese food and Italian, Singaporean, and Japanese Cuisine. The beauty of food, she says, is the way one can improvise a dish and create something magical.

Those diced vegetables, jalapenos, tomato sauce, cheese and mushrooms make me eat more and more like a unique work of art.”

Mayilsamy writes about pizza, a food he can’t get enough of, and why he enjoys it as much as he does. He explains the different elements of a good pizza, such as cheese, tomato sauce, other toppings, and the crust. He also briefly discusses the different types of pizzas, such as thin crust and deep dish. Finally, he gives readers an excellent description of a mouthwatering pizza, reminding them of the feeling of eating their favorite food. 

5. ​​ Osteria Francescana: does the world’s best restaurant live up to the hype? by Tanya Gold

“After three hours, I am exhausted from eating Bottura’s dreams, and perhaps that is the point. If some of it is delicious, it is also consuming. That is the shadow cast by the award in the hallway, next to the one of a man strangled by food. I do not know if this is the best restaurant on Earth, or even if such a claim is possible. I suspect such lists are designed largely for marketing purposes: when else does Restaurant magazine, which runs the competition, get global coverage for itself and its sponsors?”

Gold reviews the dishes at Osteria Francescana, which is regarded by many as the #1 restaurant in the world. She describes the calm, formal ambiance and the polished interiors of the restaurants. Most importantly, she goes course by course, describing each dish in detail, from risotto inspired by the lake to parmesan cheese in different textures and temperatures. Gold concludes that while a good experience, a meal at the restaurant is time-consuming, and her experience is inconclusive as to whether or not this is the best restaurant in the world. 

Essays About Food: What is your favorite dish?

Everyone has a favorite food; in your essay, write about a dish you enjoy. You can discuss the recipe’s history by researching where it comes from, the famous chefs who created it, or which restaurants specialize in this dish. Provide your readers with an ingredients list, and describe how each ingredient is used in the recipe. Conclude your essay with a review of your experience recreating this recipe at home, discuss how challenging the recipe is, and if you enjoyed the experience.

FDA Resumes Posting Regulatory Science Policy Memos on Premarket Review Process

Newly released memos focus on toxicology and chemistry related considerations.

Today, FDA is releasing several scientific review policy memoranda that provide a snapshot of FDA’s internal thinking on certain topics within the premarket tobacco review process. This action is consistent with commitments made by CTP to post scientific policy memos and reviewer guides, as appropriate, in response to the 2022 Reagan-Udall Foundation’s operational evaluation of the center . 

“We’ve heard loud and clear from stakeholders that opportunities exist to enhance the Center’s transparency,” said Brian King, Ph.D., M.P.H., director of the FDA’s Center for Tobacco Products. “Consistent with our commitment to do so, FDA is making previously internal memos available to the public to provide further clarity on the premarket review process. We intend to continue posting batches of memos like these on a rolling basis, as appropriate, moving forward." 

The memos provide additional transparency regarding the considerations that different regulatory science disciplines take into account when reviewing a tobacco product application. These are the first of several sets of memos that FDA plans to release as part of these resumed postings. This release includes six memos, developed between 2019 and 2023, covering topics pertaining to chemistry and toxicology within the tobacco product application program and review processes.   

In general, the science policy memos provide a snapshot of the Center’s internal thinking on a specific topic at a certain point in time. Therefore, the information contained in the memos is subject to change, for example, based on changes in policy, the regulatory framework, or regulatory science.  

The memos being released today are the following:

  • Considerations for Tobacco Specific Nitrosamines (TSNAs) In Cigar Filler, Wrapper and Binder, and Mainstream Smoke During Premarket Application Product Review
  • E-liquid Manufacturing Evaluation Responsibilities of Chemistry in the PMTA and MRTPA Review Program
  • Recommended Approaches for Reviewing Nicotine Dissolution Profile Differences for Smokeless Tobacco Products and Other Orally Placed Tobacco Products in Pre-Market Tobacco Applications
  • Approaches to the Evaluation of Extractables and Leachables in Tobacco Product Application Review
  • Normalization of HPHC Yields Between New and Comparison Products in ENDS PMTAs
  • Use of Reference Values in the Toxicological Evaluation of Inhaled Tobacco Products

FDA’s review of tobacco product applications is based on the specific facts presented in each application and is documented in reviews particular to each application.  The memos posted today should not be used as a tool, guide, or manual for the preparation of applications or submissions to FDA.  For applicants seeking to market new tobacco products, FDA has issued final regulations, such as the Premarket Tobacco Product Application (PMTA) final rule that describes the required content, format, and review procedures of PMTAs , as well as guidance documents. FDA also regularly posts additional resources , such as webinars and application tips, on CTP’s website and social media .  

The release of these memos  is an action step to respond to Recommendation #6 of the Reagan-Udall Foundation’s operational evaluation of CTP . How AI and deeper roots can help soil store more carbon

In 2020, global agricultural emissions were 16 billion tons of carbon dioxide equivalent (an increase of 9% since the year 2000) and globally, the 2020 farm gate emission represented nearly half of total agricultural emissions, according to the Food and Agriculture Organization of the United Nations (FAO).

In an article titled "Going deep: Roots, carbon, and analyzing subsoil carbon dynamics," published in Molecular Plant , lead author Angela Fernando, a consultant for the Alliance of Bioversity International and CIAT, and her collaborators have explained that improving soil carbon was a way for farmers to increase food production, achieve global net-zero carbon emissions, and address the impacts of climate change.

"The aim of the article was to summarize all the methods and ideas in one place, so that experts in the field would be able to make the most of them," she says.

Benefits of deeper roots

Fernando explains that deep tillage (which breaks up the soil prior to planting) and the decomposition of shallow roots causes soil carbon to re-enter the atmosphere, so deeper-rooting varieties and an understanding of the mechanisms behind different crop varieties are needed.

Fernando says that soil organic carbon is "like a cushion hidden in the soil" and that if roots are able to reach down around the two-meter mark, they are much less vulnerable to decomposition by microbes and can serve as reservoirs for nutrients and water when there are drought conditions.

Most current crop and forage varieties spread their roots out, but thanks to the discovery of the DRO1 gene that controls root angle, it is now possible for varieties of crops and forages to be developed that send their roots down to a depth of a meter.

"There's no new biomass, the roots are just tilted so that they are now growing straight down into the soil where they are not going to decompose and that means that soil carbon remains trapped down there," Fernando says.

Joe Tohme, Director of the Alliance's Americas Hub, said the discovery of DRO1 in 2013 was a "significant breakthrough" in research to adapt food crops to water stress, as deeper roots have access to subsoil water sources.

Measuring carbon

The researchers explain that one of the hardest challenges in soil carbon sequestration is still the basic task of measuring it.

Michael Gomez Selvaraj, digital agriculture scientist at the Alliance and co-author of the scientific paper, explains that samples are still being taken one-by-one as soil cores and then tested in a lab, but a combination of remote sensing and AI analysis is changing that.

"If you are surveying 400 hectares, 40 samples will not be a true representation of the soil carbon," Gomez says, "Also, most people who are measuring carbon are doing it to a depth of only to about 40 centimeters."

Gomez explained that improvements in measuring carbon via remote sensing and then applying AI analysis to that data will allow soil carbon to be quickly and accurately measured at the hectare scale.

"We have very good accuracy with the lab samples and remote samples and we now have a good AI model for calculating soil carbon," Gomez says. "We are applying it to scan huge pieces of land for its organic carbon and our hope is that in the future we go even deeper, to go to one meter below the ground."

"We don't want to disrupt the soil," Fernando adds. "We want to use non-destructive remote sensing tools."

The researchers explain that if soil carbon can be measured more quickly, more accurately and across a large area, then soil carbon could be assessed more easily and farmers could more easily participate in carbon markets.

"To get a carbon certificate, you need to have accuracy, so we are working in a public-private partnership to develop a methodology to measure soil carbon that can pay off for the farmers," Gomez says.

On the plant-breeding side, the hope is that new deep-rooted varieties of rice and forage (food for livestock) can increase sequestration of carbon in the soil.

"In the future, gene-editing technologies, including CRISPR, hold promise for expediting the creation of crop varieties suited for efficient resource capture and carbon sequestration," Fernando says, "If we are successful, farmers can use these forage legumes to feed it."
